Sausage
and pepper add a savory touch to a nutritional and muscle-building staple like
sweet potato.
SAUSAGE & PEPPER STUFFED SWEET POTATO
SERVINGS: 1
YOU'LL NEED
1 lean, hot italian turkey sausage link
4 oz 99%-lean ground turkey
6 oz baked or microwaved light-skinned sweet potato
1 cup green bell pepper strips
¼ tsp onion powder
⅛ tsp garlic powder
⅛ tsp cayenne pepper (less if you’re a spice wimp)
1 cup red onion strips
½ tsp olive oil
salt and pepper, to taste
DIRECTIONS
1. Using kitchen scissors or knife, cut casing off
sausage and discard. add sausage and turkey to small mixing bowl. Mix with fork
until well combined. Toss peppers, onion powder, garlic powder, cayenne, salt, pepper,
and olive oil in medium bowl.
2. Place small nonstick frying pan over medium heat.
Cook peppers and onions until just tender, about 6 minutes. Remove from pan and
cover to keep warm. Turn heat to medium-high and add sausage. Cook, breaking it
into bite-size pieces until no longer pink. Mix with peppers.

Cut potato open and put it in a medium shallow bowl. Top with sausage and
vegetable mixture.
